This traditional Irish griddle bread has humble origins. It is just as happy with some sausage and bacon as it is pimped up for a dinner party with smoked salmon and sour cream.
Potato bread
Makes 8 pieces
500g mashed potato (seasoned with salt, pepper and mashed with butter)
50 g plain flour
¼ tsp baking powder
Extra butter and flour
Method
Sift the flour and baking powder into the bowl with the mashed potato
Mix together until you have a dough.
Dust a surface with more flour and roll out the dough with a rolling pin.
Cut into 8 pieces and cook for 3 minutes each side on a hot griddle or frying pan.
Serve straight away with lashings of Irish butter.
